Also known as Pleurotus eryngii, are the largest of the oyster mushroom family. A large meaty mushroom with a mild savory flavor and firm texture. They are characterized by a thick white stalk and a smaller tan cap. Excellent for roasting, and grilling. There meaty texture and flavor make a great substitute for meat in vegetarian cooking.King Oyster mushrooms are the largest species in the oyster mushroom family, featuring thick, meaty white stems topped with small, tan-colored caps. Unlike other oyster varieties, the substantial stem is the prized portion, offering an impressive size that can reach 6-8 inches in length.

 

Culinary Profile: King Oysters are renowned for their dense, meaty texture that's often compared to scallops or abalone. The thick stems have a firm, almost chewy consistency when cooked, while the caps remain tender. The flavor is mild, slightly sweet, and umami-rich, making them incredibly versatile for both vegetarian and meat-based dishes.
 

Cooking Versatility: The substantial stems can be sliced into medallions and seared like scallops, shredded to mimic pulled pork, or scored and grilled whole. They readily absorb marinades and seasonings, making them excellent for barbecuing, roasting, or pan-frying. The caps can be used separately in stir-fries or soups.
 

Nutritional Benefits: King Oysters are low in calories but rich in protein, potassium, and B vitamins. They also contain ergothioneine, a powerful antioxidant, and beta-glucans that support immune function.
 

Preparation: The entire mushroom is edible. Simply trim the base of the stem if needed. The stems can be sliced lengthwise, crosswise, or shredded depending on your desired texture. Score the surface for better seasoning absorption.
 

Storage: Store in the refrigerator wrapped in paper towels or in a breathable container. King Oysters have excellent shelf life and can last up to 10 days when properly stored. Look for firm, white stems without dark spots or soft areas.

King Oyster Mushrooms are also high in nutritional value. In addition to being a very good source of protein, King Oyster Mushrooms health benefits include:

The Meaty Majesty of King Oyster Mushrooms

The King Oyster Mushroom is the largest of the Oyster Mushroom genus Pleurotus. Typically, they have a medium to large cap with a thick meaty stem. King Oysters are usually harvested when the stems are several inches in length and the caps are just beginning to turn upwards into their characteristic trumpet shape (these mushrooms are also known as King Trumpets for this reason). Occasionally, if they are allowed to age, the flesh may darken or turn a light tan. This has no effect on the taste or quality of the mushroom.

A Vegan Delight

As noted above, King Oysters can grow to very large sizes! The really large ones are sought after by vegan chefs who use them in place of scallops, which is why they are often referred to as “Vegan Scallops”.

King Oyster: A Chef’s Staple

King Oysters can be prepared in many different ways. They are often broiled, sauteed or grilled and can be added to soups. sauces, meat and seafood dishes. Because of their meaty texture and density, additional cooking time should be allowed. They are best stored in a paper bag in the refrigerator with a shelf life of around 10 days.
